  A whole grain can be categorised or divided into three layers:

  • Bran.
  • Germ.
  • Endosperm.

Bran: Hard outer layer that protects the seed. Contains fibres, minerals and antioxidants. Germ: A nutrition rich core containing carbs, proteins, fats, vitamins & minerals. Endosperm: The largest part of a grain, comprising entire starch(carbs) with low proteins. Brown rice is a whole grain that contains both bran and germ. It is nutritious and rich in fibre and antioxidants. In contradiction, white rice has had both the bran and germ stripped. Hence, lacks prominent nutrients. The process of stripping the bran and germ layers of the grain is carried out to improve the taste and shelf life. Clearly, white rice is rich in carbs and has a high calorific value than brown rice. With a high intake of white rice, there is a risk of obesity and a rise in blood fat levels.
